Bucatini, also known as perciatelli, is a thick spaghetti-like pasta with a hole running through the centre which holds lots of sauce, making it the perfect partner for Luce e Limoni’s luscious spiced Sicilian pork belly ragout. You might not know that Bucatini gets its name from buco, Italian for “a hole”.
And then there’s linguine, a long, thick pasta, elliptical in cross-section. It’s wider than spaghetti, but not as wide as futtuccine. Linguine is typically paired with seafood and in fact our black linguine gets its colour and subtle flavour of the sea from squid ink. We serve it with seared scallops & asparagus in a light shellfish sauce.
Rigatoni is a short, tubular pasta, larger than penne and with a ridged surface. It goes very nicely with our fried aubergines, tomato, basil & salted ricotta cheese.
