Take our salmon and fresh mint fishcake, for example. Delicate and aromatic, it’s paired with a creamy horseradish sauce that adds warmth without overwhelming the fish, finished with a crisp salad garnish for freshness.
Sicily’s love of combining land and sea is beautifully expressed in our grilled stuffed squid. Filled with ricotta and lemon zest, the squid is tender and fragrant, while the accompanying sauce of chorizo, capers and cherry tomatoes brings depth, saltiness and a hint of spice. It’s a dish that captures the island’s bold yet balanced approach to flavour.
